A while back I was standing in line behind a guy and his hair caught my attention. Sure enough -- hair from a can. It was really weird. His natural hairline was bald on top, hair on the back and sides. He had it painted on top all the way to the front. Shoulda just got a hat.

Thanks.  It was as good of a turkey as I've done lately.  8 lb turkey injected with a full bottle of Tony Cochere's creole butter, apple wood smoke, chardonnay for liquid in the pan and cooked to 165 in the breast, then off and tented with foil to cool.  We had a Chief's party Sunday and there were two slices of breast left.  The rest disappeared fast.  It was super moist with great flavor and just the right amount of smoke.  The small birds don't take all that long, even on the Joe.  I'll for sure do it again the same way.

I didn't use to care for smoked turkey, but the last couple years since I have started brining them and using my electric smoker I love them.  Could use heavier smoke on mine but dang good the way they are.  My smoker has a temp probe that you can put in and read it without opening it up.  Used to have a remote control also but I promptly lost it so now I have to walk all they way over to my barn to check themo.  And YES that temp probe is crucial.  A friend electric smoker control unit went out within a couple month of him buying it and he keeps it covered, company sent him a new control unit for free.  The cover for mine is somewhere but seldom gets used and so far not an issue.

Oh I always probe my meat.
