Talked about it so I decided to to do it.

Crab cakes with carrot and onion rice pilaf and a cucumber tomato salad.

Tonight I made a dish for my wife.  Schnitzel, I guess technically Jaeger Schnitzel?  Sliced pork loin, hammered out, seasoned flour, egg mixture and back into the flour.  Cast iron skillet, when all were done I dumped in a ridiculous amount of sliced button mushrooms, then some chicken stock and thickened with corn starch.  Some left over broccoli went into another skillet and a bag of chicken broccoli rice in the microwave.  Two pics because with the gravy you can't see the schnizel and without gravy is WRONG.  I am thinking hamburger helper for tomorrow night!  WTH pictures not showing up?

If you liked what you cooked it is good! Usually finish a schnitzel type breaded fry with fresh lemon. No gravy. The spices go on the meat before breading so they stick.

I thought about a spritz of lemon but decided against it, overall it was darn tasty.

Love me some jaegerschnitzel! I wouldn't have squirted lemon on gravy either.

I make "crab" cakes out of crappie and catfish alot.  I have several places over run small crappie.  I just filet them out, boil them and put them in the fridge.  Then crumble them up and make a "crab" cake out of them.  They turn out very well that way.

Good for you! I use chunked fresh fish and make fish burgers. Compare this to what you do:

I use whatever fish I have. Crappie mixed with bluegill, white bass, or walleye would be great. Unwanted spotted bass would work well too. It is a great way to use the trout someone gave you as well.

Been a few minor tweaks over the 50 years we’ve been making it. No onions, 2 cans of potatoes, whole can of consommé and less tapioca.
