My wife is headed off to visit her mom along with my daughter and grandson.  so since it will be just myself, mom and my college son I am thinking Steak.  A trip to the new store and pick out 3 of the nicest steaks they have.

Going to feed homeless and usually have left overs from there. But that meal tastes pretty good after feeding people so less fortunate. It's a shame we have so many people hungry and that's coming from a very conservative person. Most people I feed are not happy accepting free food, but have no choice especially with kids. Let's not feed the world but concentrate on the US. Just my 2 cents since I have been blessed.

I used to cook a holiday meal from the school kitchen, but administration and cafeteria boss have changed and that went away. I know about things tasting good.

Gonna be a smaller event this year than previous ones. I'm a sentimental dude, and it's gonna be pretty Norman Rockwell at my house. Brined, roasted turkey (about a 15 pounder), mashed potatoes and gravy, cornbread stuffing and pumpkin pie. Brother and his wife will bring along something -- not sure what at this point. I do like the good old green bean casserole, sweet potatoes, cranberry sauce and corn casserole, but I won't go to the trouble to make all that because my kids won't eat it. Might also do a tiramisu for my baby girl.

I just made a batch of spiced pecans for pre snacking.  4 C pecan halves, 1/2 tsp curry powder, 1 tsp salt, 1/2 tsp granulated garlic, 1/4 tsp cumin, 1/4 tsp ground ginger, 1/4 tsp cinnamon, 1 tbsp. Worcestershire (Lea and Perrins only!) 1 tsp Louisiana hot sauce, 3 tbsp. butter.  Melt the butter and add all the spices and sauces in a small sauce pan, let it meld for a few minutes, not too hot.  Put the pecans in a large bowl and add the spice butter mixture, stir gently to coat the pecans.  Put the pecans in a single layer on a large cookie sheet.  Bake 30-40 minutes at 325 stirring about every five minutes.  The pecans will get darker brown when they are done.  Cool and then put in an airtight container.  Trust me guys, those babies are good.

I had to make another batch so there would be enough to take for Thanksgiving.

Put together the brine tonight. Needs to chill overnight to be cold and ready for tomorrow.  Been using Alton Brown's brine and roasting method for a dozen years or so...love it, so no reason to change now.

Bring it all to a boil then cool and refrigerate until tomorrow night.

Took tomorrow off so the pressure is reduced. Still a lot to do. Went to three stores tonight looking for lady fingers for the tiramisu. Nada. Dang. I will not surrender!!

I'm going to take a big fat ham and coat it with honey, give it a good coating of rub and place it in the smoker.

Then I'll take a big nasty turkey and give it a good oil rubdown. I'll place it in the smoker right below the ham. And those sweet juices will drip on that bird most of the night.

I do the same thing every year and I'm not getting any complaints.

Giving big nasty turkeys oil rubdowns? Big fat honey rub downs? I may have to call social services! Or better yet, come by for a full investigation myself!?
