Even some black bullheads are sort of splotchy to a lesser degree:

Yeah, I was just talking about the species you're likely to catch in MO and AR.  While there are brown bullheads here and there in the Ozarks, they are not common to my knowledge.

I agree...most Black Bullheads and Yellow Bullheads are not splotchy.  Like these Black Bullheads:

There's always the exceptions, I suppose.  This Yellow Bullhead that ate my fly was sorta splotchy as well:
