We like blackened catfish.  Redfish are better but we never see them around here.  Blackened seasoning and cooked in drawn butter.  Yum.

Agree, but we live where saltwater fish cannot be easily caught....walleye and stripers are my normal targets, but even they pale in comparison to saltwater species like grouper, hogfish, etc.  Sometimes we just have to make do, and make do I will because I do love fish.
