snagged in outlet 3 Posted May 3 Posted May 3 I take the roll out of the edge with one of those round things the chefs use and touch up the edge with the carbide tool. Works great and I don’t have to dig out the machine or buy new belts.

That makes me think the edge angle could vary from the targeted angle or, the edge angle could vary if there wasn't consistent pressure applied. Is that right? Yes, that's right. Consistent pressure on the belt and using the bottom guide correctly is the deal. You do get a convex edge. Operative word being edge. I have an Old Hickory boning knife that arrived very very dull. Ten minutes or so on the KOWS and it's razor sharp. DO NOT run the tip off the edge of the belt. ness 1

jdmidwest Posted May 4 Posted May 4 I like the WorkSharp ones. I have the bench stones and the portable guided field sharpener like one shown above in my vehicle and on my night stand if I need a touch up. Its a great all around sharpener. Even has a piece of leather to finish. I have the Precision Adjust System, but it does not seem natural. I have used it for larger tools like an axe. The angle sharpener with the tri stones is not too bad. I have several Arkansas Tri Stones and some black ones for fine stuff. I prefer them for my better knives. And a few good leather strops to finish them off too. Multiple small dog bone style ceramics for hooks in tackle bags. And a few rods in the kitchen for those knives. I don't own a powered sharpener. Just never had the urge for one. Blades get too beat up, take a grinder to them and work them back in shape. I've had a Chef's Choice electric one for years, but I've never been all that thrilled with it. And, as it has aged it's getting worse. I've done some searching, and now I'm bombarded with all kinds of ads for various contraptions, but would like a recommendation from a real-life person. I have a Tormek 10'' wheel, Wet wheel and I can shave with the knifes after I sharpen a knife. Terrierman and ness 1 1

You gotta hear from some random guy from Milo but won't listen to the rest of us. You're lucky I don't put you on ignore. BTW, you are going to love that worksharp. We need a follow up report.
