Can't be compared to rabbit in my opinion.  Neither in taste or texture.  

I've actually had gray squirrel that was simply too tough to eat.    Can't say that about any rabbit I've ever fried.

    You cannot just fry an old squirrel and think it's not going to be tough.  I'm just going to say this it like it or not. You don't know what you are doing with your meat. 🤣 In the last couple of days I have shot four out of six that are not going to be for frying but I can make them tasty. You could pressure cook them and then fry but why? There are more interesting things to do with them.  Just go to the dollar store and get you some of the ground up chicken shaped like dinosaurs call them a chicken nugget and be happy.

When I was in high school, I killed a lot of squirrels and Mama  got most of them tender in a cast skillet with a lid. But, she made them feed more people by cooking with dumplings on the days when I didn't get a limit. I don't recall her ever not getting the meat tender enough to eat, even roosters. I probably should have paid more attention to process.

That said, I wouldn't compare squirrel to rabbit either. Each is unique in flavor and texture, just as pig is different than calf.

   There is no frying involved but I can get this falling off the bone tender. All squirrel can be made tender period. I'm getting ready to pressure can some. That stuff is the bomb. What you must do is try something different from what Grandma, Mom or Aunt Betty did. Cooking has come a long ways. Adapt 

 I separate my squirrel when vacuum sealing. Old, medium and young. Cook according to that age. Its easy

Any seasonings, etc. when doing the pressure canning?

Just a bit of canning or sea salt depending on the jar size. I do them in half pints. They hold one quartered up squirrel. Tell you what we will send you one after I get it done.
