I often even hate keeping that first fish unless I am confident of catching a few more to round out a meal. I wonder if when we do get that one or two that we keep and use as crab bait if that is use enough to not break those laws. As you know we use the shanks. Where we would fall short in Alaska would be getting the between the rib meat. Usually we leave that on our carcasses.

We have a little grinder like that and also works great making dried mushroom powders👍

We actually use chopped capers in ours with a little sweet relish. Also use dry Coleman mustard powder.

@FishnDave did a great job as our guide. Dave put us on fish. Both Livie and I had chances and we just didn't get it done. It was great meeting Dave and the tour of his secret creek. Some of those fish were so aggressive to our floats that I was sure one would run off with our jigs. We'll have to see when we will get a chance to fish together again. Maybe when it's doesn't seem to feel like it's in triple digits😉 So glad that you caught that big grassie!

Really like the flavor of beef tongue. Is a lot of effort but it is worth it. We don't see it that often. May have to ask at the counter if they have one or two that they don't put under the glass fro t.

More photos again for @snagged in outlet 3 🤣 A mirror koi made Livie jealous🤔 Followed that up with a scaleless leather koi. Had fun but had to get out to Warrensburg MO. Caught my lifer koi and thanks again to @FishnDave -
@FishnDave gave us Intel on his favorite ponds in St Louis where he catches a variety of koi and goldfish. Still need a koi for the life list. Dialled in the maps and pointed the car out of Morehead KY and did the 5 hour drive to St Louis. Started in a pattern of deluge and drizzle then deluge, drizzle then repeat... Quite a few people list there lives due to the flooding in KY. I prepared for the koi by getting $0.75 worth of fish pellets from the White Springs Natl Hatchery in WV. After the drive we pulled into a spot, got our gear together and headed to the ponds. Sue and Livie had fished these before. First spot was below the second water fall. Tossed out some fish pellets and we soon caught some goldfish and I got my first koi. We caught a few when I cast out to a big orange koi. It bit and after fighting it, it hung me up and broke off. Later I hooked another bigger one and that one broke me off. But third times a charm. Had a lot of fun and landed this guy. Then Livie caught a pretty one.

Pretty competent fisherman and hunter. Process my own.We are better armed than our neighbors. Besides there might be room for a couple of them on the menu🤔

Back to rubs. I agree that beef steak gets salt and pepper or at most a season blend like Montreal seasoning. I prefer to use true rubs with pork. My favorite rub mix for pork includes Asian five spice, garlic powder, cumin, smoked paprika, S&P, and brown sugar.

There is always a good or better cut even from a poor cow. One thing @BilletHead hasn't mentioned (at least not up to this point in thread) is the marbling or the interstitial fat throughout the steak. Usually the more marbling the more tender the cut on top of the muscle groups that Marty mentioned. Waygu steaks have way more marbling than corn fed US steaks and way more than grass fed steaks anywhere. When the fat renders as the steak cooks it leaves smaller and more tender muscle fiber bundles. Also the fat in most cuts is the best flavor. A sirloin steak has less marbling and fat than a NY/KC strip than a ribeye. The ribeye is more likely to be tender and better tasting in comparison to a sirloin. At least to most people's taste.

Moormans River VA Mountain Stream

The Folly family is on the go. Heading out to MO and KS to see the kids and grandkids. Any Folly trip is going to have fishing stops along the way. First stop was only 215 miles from home, the Moormans river (really just a creek😉) that feeds into Sugar Hollow Lake in the Shenandoah Natl Forest in Western VA. Water in the creek was running high but clear. The faster water made it difficult to sight fish. We fished this spot last year and Livie caught a mountain redbelly dace and I did not. Last year this was almost a vanishing creek with a series of pools. This year a flowing creek. We had to fish blind but the fish were there and active. Quickly caught a few bluehead chubs in some of the deeper water. I tried some edge water off the main flow and caught another bluehead. The next bite was a little more subtle and was a mountain redbelly dace! This was the first of Hopefully a few lifers on this trip! A spawning male would have been great but I am way happy with this catch under uncertain circumstances. Both Livie and I caught more blueheads and Eastern blacknose dace. We fished for about 70 mins. Towards the end Livie missed what looked like a trout that came out from under a large boulder. She cast again and landed her largest bluehead. Not wanting to disturb that fish too much We went and fished downstream some before she tried drifting past that Boulder again. She got another cast and good drift and it bit again. This time we both could see that it was a 10 to 11 inch brook trout. Then it was off and gone😟. Couldn't spend too much more time with a lot more miles ahead of us. Sue found some chanterelles while we fished. We all looked and ended up with about 20 goldens and cinnabars.
