Decided to try the first-place winner. Well, it was a winner here too. Followed the recipe exactly.
S&P the squirrel pieces then browned them. Dried chiles were seeded and got happy in some water. All ingredients blended to make the sauce
The browned squirrel added to the sauce and simmered four hours, 
When it was tender pulled from the sauce and deboned. Then added back to sauce. Taste test! Hot dang!
When Pat got home from work corn tortillas heated. Meat and sauce put in. Then Queso Fresco, cilantro and red onion. Juicy tacos. Can eat about half of each one buy hand then a fork is needed,
Super good and can understand why it was a winner. There will be some enchiladas worked up this weekend. All fork work eating :).
