  2. What! I live in the "Dark Side". Wear boxers and my cap with the right side forwards and have not made a Go Pro flick! Oops I do have a couple nice hybrids caught with the fly rod but not shared does that count? I even had the spinning rod in my hands I think three times this year (Don't tell anyone though). I even have some of them there plastic Whore crawdaddies I am going to try too BilletHead

    Ohhh that looks mighty tasty there Ness! Did you poke out and eat the marrow? Watched Anthony Bordain eating marrow on his show. Then one day we did some dish with shank. Cannot remember what we did but do remember eating the marrow out of the bone. Oh My how good, BilletHead

    Kung Pao Venison, http://honest-food.net/2015/11/02/kung-pao-venison-recipe/ Again getting out of my comfort zone. When this thread "Whats Cooking?" got started it has helped me get out of my comfort zone. Nothing wrong with the comfort zone but what I had been missing in cooking was unreal. This dish was the bomb! Missing some ingredients so this was a good excuse to make a trip to the big town of Joplin. There we picked up Sichuan peppers and Sichuan peppercorns at Fox whole food store. These peppercorns were something I have never messed with. 2.50 an ounce. Got an ounce but the ounce will do I bet a dozen dishes. Out in the car I popped a peppercorn in my mouth. I started cracking it with my front teeth. Yes it was peppery but as I munched it there was a flavor hard to explain and my tongue and lips got numb and tingly. I thought this is going to be good! Then at Sam's we bought a rice cooker multi task tool that can bake cakes, steam, crock pot etc. At home read rice cooker directions and made a batch up. Got the ingredients worked up and fired up the cooker and wok. Went to cooking with Mrs. BilletHead being my sous chef. Rice came out perfect too. Some photos of the cooking and finished plate, Another keeper for sure. As you ate this you could pick out the different ingredients unique taste. Now if I can get Mrs. Mitch teach me how to make her pot stickers BilletHead

    For sure chief and rare is how I like it just like you. Killing your own game and how you take care of it gives us that luxury. Keeping the moisture with the bacon wrapped around it messed me up this time. Guess a sear on the meat and could of thrown the bacon away. Won't let it happen again.     Bacon Wrapped deer chops. Grilled some chops this afternoon. Had a salad from the garden, peppers still hanging on too but they are about gone. This is from my archery doe. Cut them real thick. I have a hard time getting the bacon done but not have the meat done too much. This will work but would rather had it on the rarer side. I think next time will omit the bacon and baste with bacon fat thus have more control in meat outcome. Tasty none the less we have happy bellies, BilletHead still likes shopping in the outdoors,

  11. I think this is a squirrel? Cuz he has a nut in his mouth. Second picture thought maybe a bear . All in jest fellows. I know I have seen things I made a guess on but had no positive ID. Now second hand account spotting like Amery said I may doubt but I will try not to question what someone thinks he seen. I do think with trail cam technology and all that are out there there should be more proof that there are so many seen. BilletHead

  13. They were there before us. I am like Al. Let them be. Good grief California is loaded with them. As liberal, oops I mean progressive, not right there either. I mean as tolerant as they are if they were eating too many of them out there I am sure they would do something about it. It is like this it is way more dangerous to drive down the road as being eaten by a mountain lion.

    I need a bigger pot, Our tribe, BilletHead JR and his family will be here this evening so he can deer hunt this weekend. A good time to make a pot of chili. My pot almost runnith over. This our favorite chili recipe. I did a double batch. The Mrs. dug it out of our archives but I could not remember where I had got it. The top of the paper was smudged and I had to look hard to see it's origin. We will go back a few years before getting the recipe. Fifteen years back I met a gentleman by happenstance. I was driving down a dirt road and I about broke my neck seeing a moose shed on a front porch. I was/ am an Abo flint kanpper. A nice billet can be made out of moose antler. The base is very dense and a properly shaped moose billet can drive a nice flake off of a hunk of chert. It took me several trips by this house to finally get up the nerve to knock on the door to ask if maybe I could procure this horn. So I finally tapped on the door and it opened and a fellow by the name of Bill Watkins. He asked how he could help me and I told him what I wanted. Hummm he said so you are a knapper? Yes, he then said will you trade maybe with me? Well yes what are you looking for? Maybe some of you homemade points? We can do that. I returned one day and we did a trade. He invited me in and I found out he was quite the outdoors man. I seen photos, stories and he told me of his boys and about his and their hunting and fishing adventures. We visited many times and shared e-mails. As his health declined he moved to Kansas City near his boys. I had lost track of him after that, no more emails. This week I seen in the local obits he had passed. Now to this morning. I started making this chili and in the smudge on the top was his name. He had sent this to me in 2003. Funny how things work out. I am not sure if this is his creation or if he copied and pasted from somewhere else but it is good. RIP Bill and thanks for your friendship, Black Bean venison chili Ingredients: 2TBS olive oil 2 medium onions chopped 1 red bell pepper chopped 1 LB Italian sausage 2 LBS ground venison 6 garlic cloves minced 8 OZ diced green chilies 1/2 TSP pepper 1TSP salt 3TBS chili powder 1 TBS dried Basil 1 12 oz can tomato paste 44 OZ canned Italian plum tomatoes 1 cup beer 32 OZ black beans, rinsed and well drained 1/4 cup fresh cilantro Prepare: In a large skillet or dutch oven, heat oil over low heat. Saute onions and red bell pepper for about 10minutes until tender but not browned. Add sausage, venison and brown over medium heat. Drain off excess fat. Add Garlic, chilies, pepper,salt, chili powder, basil and tomato paste. Stir in the tomatoes, beer and beans. Simmer over low heat for 30 minutes. Taste to adjust seasonings. Stir in cilantro before serving. May be made ahead and reheated. I have been using standard diced tomatoes. Chilies we grew and I smoked. Skipped the cilantro. Like the stuff but just have not used it in this recipe. Used pumpkin beer. Recipe above is a single batch. I did a double batch. This freezes well for later easy fixins.     Mother nature has given them the gift of being able to handle all but the worst of elements. I have shot deer in a down poor. So my answer is no, especially during the rut and the rut is now. Actually Wrench has added that during wind they will hold up but I have seen in my neck of the woods deer being very spooky and move all over because of the wind. BilletHead
  21. Thanks for the complements guys and the good discussion on the hits or miss hits. Taking your time, paying attention to making a good shot and the follow up after that shot good or bad. One thing is that contrary to belief deer don't jump the string they duck the string noise. They have to drop to jump up thus you will shoot over them every time even though you might have your yardage right. The longer the shot the worse the problem will become. When I was able to shoot my self bows I was lobbing arrows out there at maybe 125 or a little more feet per second, yes I could shoot, drop my bow arm and be able to see the hit . So add slow speed to this and see how the arrow goes over the deer pretty easy. You all might think about aiming a bit low. I would much rather shoot under a deer than high on one. If you hit that deer on the low side you can still clip that heart, a hit high on the back is not going to do you any good. Use a good broadhead. I mean good. When expandables first came out they were junk and some still are. When I had to change equipment because of my shoulder. I looked at many heads. Finally decided on the one hundred grain swacker. New bows now are so fast they can drive right through. Blades on this head are thick and I have taken four deer in four shots. No broken blades, some bent but not broke. I have even resharpened a couple of blades. Devastating wound channels. Guess not exactly a wound channel but kill channel through the animal. You see videos where after the hit blood gushes and sprays out of the animal? All four of these deer in the last two years have done that. I mean sprayed and gushed out the sides of the deer making death as morbid as it sounds quick and more humane. So my point is especially to you newer hunters is practice, don't shoot beyond your capabilities and use a good head, BilletHead
  22. John I was a bit worried because the tips on these were starting to turn some. They tasted fine and were very good. I also wondered if they would be mushy cooked this way but no they were almost crunchy to the bite. BilletHead

  24. I'm done no more deer for me. Not even going to firearm hunt. BilletHead Jr. Will come home to try his luck. We duck hunted this morning with no luck. So this afternoon we hit the woods for deer. Mrs. BilletHead on the North side of the eighty we hunt and myself to the South side. Strong south wind but I was on the North side of a trail so no worries or so I thought. We headed off in different directions and sent each other a text when we got settled. So windy it was a pain. I hear something behind me, wrong side for the wind. Sure enough here comes a buck. Not having time to think do I want this one or not? Here he came, a few more steps and he will be down wind, smell me and be gone. He stepped into an opening and I let him have it. He ran a few steps and then started walking. He than stopped and fell over dead. He was four yards from my tree and after the shot went fifteen yards. I texted the Mrs. and told her that her to come on over I shot one. When it gets this close to gun season I get anxious to get my bow deer over and I did this. Three and a half year old. Ten point with and extra flier point most of it broken off that would of went to the inside of the rack. Another one for the larder and again blessed to have a full freezer, BilletHead
  25. Yes just like Mic says, choose your future bride wisely! Actually I had no idea this partnership would turn out this way but sure glad it did . This was the Mrs. day off and I asked her last night what she would like to do today. Either Bow hunt morning and evening or try for ducks in the morning and deer in the evening. Her quick reply was Ducks! So we went and nada, nothing, zilch did not even fire a shot but again another sunrise together. So it was deer hunting this evening, story on that in archery.
