Gavin Posted October 20, 2019 Posted October 20, 2019 Testing out soups for the family soup party...Wife came up with a stellar clam chowder....The must go gumbo on the stove right now is really good...Some lemon pepper chicken in there, and it adds a surprisingly good finish flavor. The Italian sausage soup was great....Might go with that next Saturday. Wife is gonna enter clam chowder, and my 10 yr old wants to enter as well...Need 2 more crock pots.

I quickly hid it down by my feet. Thanks @Chief Grey Bear. That’s some damneded fine smoked bologna. Pretty sure some folks thought that was a drug deal. I didn't get to share enough with you and the boys this year. It was just a small token of my appreciation. A little side bar: I had crab cakes a few times in my younger days and just didn’t care for something in them. In the seasoning I think, because I love crab. (I’m not a big fan of Old Bay, though I see it mentioned here quite a bit. That may have been it). Anyhoo, several years ago I was in DC and stayed at the Embassy Suites in Georgetown. Went to the bar to grab something quick to eat and figured I’d give crab cakes a try. Dayum! That changed my mind forever, and is still my gold standard for crab cakes. Been a few years but I remember pretty subtle seasoning that let the crab shine, and a slightly spicy aioli-type sauce. I’ll occasionally order them out now but I’ve never quite equaled those. Try this recipe. It will blow you away. https://books.google.com/books?id=waN-ezOLeVgC&pg=PA82&lpg=PA82&dq=frank+stitts+crab+cakes&source=bl&ots=8H5wr_mDQ5&sig=ACfU3U3p2UX205FuMSXGeWytSubIdvNu6g&hl=en&sa=X&ved=2ahUKEwjo1eGT2K3lAhUBC6wKHa9PCkIQ6AEwCXoECAkQAQ#v=onepage&q=frank stitts crab cakes&f=false It comes from one of the best cookbooks I own, The Southern Table, by Frank Stitts. ness 1

That looks like a pretty 'pure' recipe, with the crab front and center. That's the way I want it. Thanks. John
Gavin Posted October 21, 2019 Posted October 21, 2019 Hard part is good crab. Easy to source in Maryland or DC. Having some shipped from Crabs to Go in Ocean City MD on Thursday. Will see.

They have good product. For crab at our place, I know a girl😀! Will look at that crab cake recipe. I know that we are not the cleanest pickers. Get a few shell pieces when we are done. Gavin 1
Johnsfolly Posted October 21, 2019 Posted October 21, 2019 I will say this. After crabbing make sure that you put the bait in the freezer. Don't leave it in the cooler for a week 😵! Don't ask how I know about this😌. Gavin and Flysmallie 2
