Leftovers tonight. Took the kernels from a leftover cob of corn. Cooked that up with some diced onion in a cast iron skillet. I diced up leftover meatloaf and added that to the corn and onion. Added a cup of beef stock with a tablespoon of corn starch into the skillet. Added dried oregano and thyme and powdered garlic. Once warmed through covered with leftover mashed potatoes and topped with Colby jack cheese slices. Into 375 oven for 8 mins.

Excellent repurpose! Yum!

Wife picked some nice bolted out of the yard today, gonna include them with a mix of bacon, diced squash and diced maters.  And a couple t bones waiting to hit the hot cast iron griddle on the grill for a quick sear to med rare.  Might even remember the take a pic, but am dang hungry, will see.  LOL wife said NO to putting he mushrooms with the other, gonna eat them herself.

              Tomatoes, tomatoes, tomatoes!

  What to do, what to do, what to do?   I have been wanting to do a tomato Galette for sometime now and Randy posting his made me want to to one even more. Todat was the day and this was my first. Did not make my own pie crust this time. My helper was at work so this was on me and I took the easy road and used a premade one. I made two. 

thumbnail_0812201746.jpg  under that single layer of tomatoes is a mix of goat, Gueyere and Parmesan cheese with garlic chives and thyme from the garden. Tie to fold the edges and brush with olive oil and garlic,thumbnail_0812201751a.jpg

  Into the oven for 30 minutes at 350. After 30 minutes I did a few more to keep it plenty warm for Pat's return home. Pulled it out just as the driveway alarm went off as she came up the driveway.thumbnail_0812201842.jpg Darned good. We polished off one and will do the other cold for breakfast in the morning. 

  When I printed off this one I did a couple more including A Duck Fat-potato Galette with caraway and sweet onions. No crust just potatos in a circle. I'm going to be all over that one soon!

Marty:  Margherita pizza is only good with proper tomatoes.  You know what to do about a nice thin crust made buttery crispy around the edges.  Get with it!
