Did a pork butt braise Sunday evening. Used my standard rub with five spice, smoked paprika, garlic powder, black pepper, and a little brown sugar. Before I coated the roast I cut pockets in the meat and stuffed each with whole or half garlic cloves. Coated the meat with the rub and seared on all sides in Dutch oven. Added more garlic and chucked onions along with a dark beer (Modelo negra) and a cup of vegetable stock. Cooked covered for about 3 hrs at 350. Served with a broccoli and cauliflower casserole.

Peppered dove,

   By far the best dish we have had using dove. Really easy too.

   Did little potatoes that we seasoned then coated in goose fat in oven. 

   Will post up the recipe.

My fowl weren't fresh came out of the freezer. Duck confit I did last winter brought out and cooked up with cabbage and onions. Had to share some of the confit with Foster. Hey guys! Please do not let this thread die!

We can redo recipes at this point. No one has the stamina to go back and read all the past posts.

Mushroom marinara on bucatini with fresh shredded Romano cheese and basil.

As our dog Max aged he lost a lot of weight and we had to get more and more creative feeding him. Here’s something I cooked up for him a couple weeks ago.

½ can Purina One
½ packet dry dog food
1 slice deli ham, chopped
½ cup 4% cottage cheese 
1 slice Velveeta cheese, torn into ½ inch pieces
75 mg Prednisolone
Whipped topping to taste

Behind him is Ruby, who could not be trusted 😀. She was quite helpful cleaning up after him though.

We did a couple cooking classes recently at a local Italian restaurant called Jasper’s. It’s our favorite Italian place these days. 

Jasper did this delicious crispy polenta with shrimp and saffron brandy cream. I will make this!

Also did a braised pork butt over Robuchon potatoes.  Roubochon are something like 50/50 potatoes and butter.
