Get to use an @rps term tonight. The pork chops we bought from Costco the other day were “succulent”. I ate 2 of these. My father in law has been staying with us few a few weeks and really did a great job cooking these. He loves it when you compliment his cooking skills and just smiles from ear to ear!
Anyway these chops are one of the best values from Costco, much better value  than their pork ribs in my opinion.

A bone in thick pork chop done correctly is hard to beat.  Back in a former life I spent time in Iowa in winter hunting raccoons.  There was an absolutely incredible local steakhouse that did every last thing on the menu and salad bar from scratch in house.  Including pickled herring, pickled beets, best pea salad you have ever had deviled eggs, you name it. And some great - truly great steaks - most everyone ordered ribeyes and I've had one and they really were great.  But.  My usual was the Iowa Chop.  A 2 inch thick bone in pork chop.  Grilled just right.  Freaking incredible.  Wish I could do it again!  But alas, those days are gone.

Edit - it was a supper club, with good cocktails.  Dang it!  I miss that time and those guys.

Sounds like my kind of place fo sho! I wish now I would’ve had some type of excellent gravy and mashed potatoes to go with it.

                 Uh oh,

I didn't follow step 2 exactly right. I took off the amount to feed, fed it and put it back in the fridge. The rest I only let set out on counter for a couple hours until we mixed the dough. used enough to make it and pitched the rest. Could you imagine what would of happened if I did step 2 correctly? The bread would of popped the top off the dutch oven and filled the stove oven and opened the door!

The culture was obviously ready to go!
