I do all my own as well but I am allergic to pork and for that reason use beef.  When grinding venison I will use a packer trimmed brisket or sirloin tip and do roughly 75/25 or 80/20 depending on how much fat is in the beef.  I never fully thaw meat before grinding for the reasons you state.  My only beef(pun intended) is It will never taste like pork - while I love, probably because I shouldn’t - but that is how I roll 😂.

I used to make a lot of pork sausage from various recipes, seemed lie never quite the same twice but alway good.  Have used venison and some beef tallow before, definitely a bit different flavor profile,  but still good I thought.  Haven't made any in years, seem to make my ground venison into either presents to friends or summer sausages or both at same time.  Kids get a little feisty if they catch me giving away smoked summer sausage.  They will raid the freezer and take 2 or 3 every time they are here.  Pretty sure my son lives on it and cheese for days at a time.  They will leAve behind beef roasts and steaks to grab a few sausages and some ground beef.  Silly kids.

            Bummer Mike! But nothing wrong with some beef fat. When we do a steak I eat all the fat associated with it and some of the Mrs. off of her plate.

When we lived in Columbia had a good friend that was the meat manager at HyVee. He would get us beef fat trimmed from their steaks. We would grind that with venison if we wanted burgers or meatballs.

Wife asked me to get a roast out last night, so I grabbed and arm roast just because.  It went into over this afternoon in a new enamel coated cast iron French Oven I bought from a local facebook seller yester day. Actually I bout 2 if them and a 1 1/2 qt sauce pot all cast enamel coated.  Anyway the roast had some issues, she misheard me on temp and it was dry and in of tough, flabor was good and the veggis, vmcarrots taters onions and some baby ports were delicious as was the gravy.  So I brought over the girder and we ran it all through asllnd now have a bowl of meat and veggies for hash patties tomorrow, guess I am up for that!

Braved the grocery store today. Amazing to me that people don’t respect the one-way aisles, social distancing, or wear masks. At one point I got trapped in an aisle against a display by a douche bag going the wrong way, no mask, just a couple feet from my face, staring into his #%^*ing phone. I was about to go off on him when he snapped out of it and apologized. 

Anyhow, found most of what we needed including a couple decent looking t-bones and some asparagus.

Decontaminated.

Grilled a steak, baked a couple sweet taters, steamed the asparagus and topped it with some Hollandaise. Darn tasty.

as far as the SD in a grocery store...I’ve come to realize over the years that some people think the rules don’t apply to them. I’m not talking about being distracted by a cell phone, or using it as an excuse, I’m talking about people butting in lines specifically made for (and marked with tape by the way) SD. Costco seems to be the worst, not sure why. Actually I do know why but won’t say. 😂
