Been hectic here for a while, surgery, infusions blah blah blah, plus mom passing away.  Wife on a much needed day trip with friends to a bakery or something in North MO.  What does a one armed hillbilly make for lunch in such a situation.  Well depends on what you find in the pantry and fridge.  Turns out it is Kraft shells and chesee with some extra hal and half and asiago cheese, along with some leftover rotisserie chicken.  Looks like a dogs breakfast and I am sure she would love it, but tastes good.  

Will do.better Sunday, we are back to Sunday dinners with friends and it will be out turn to cook.  Have a nice ham to baste with frozen orange juice concentrate and put n in smoker, wife will make a big pasta salad with rotini, black olives, tomatoes, green onions, artichoke hearts and who knows what else with plenty of olive Garden creamy Italian dressing, and probably some  fresh sliced strawberries.  Will try to get pics of that one so it can get this one out of your brains.

While out on a one armed foray I stopped at a small market that is known for having a great meat counter.  Asked which bologna they had was the best, no hesitation they selected one of the two choices they had.  I asked for a half dozen thick, 1/4 inch or better, slices for my wife.  She likes to fry the stuff, 6 slices were 1.25 lbs, couldn't being myself to take a photo of boloney, but she was sure excited.

I actually really like pan-fried bologna, but prefer thinner slices. As a kid that was one of the few things that my dad would make us - fried baloney sandwiches :D.
