Last time I did a pork butt there were some nice leftovers that went in the vacuum sealer.  Tonight is Philly style pulled pork on a baguette.  The peppers are those multi color baby sweet ones and the onion is a Vidalia, cheese should be white American but all I could find was shredded Colby.  It will do.  The sauce shall be Carolina style mustard/vinegar base sauce.  All to be done on the Blackstone.

   Smoked mallard loaded nachos. 

Layer of chips,black beans, green onion, jalapenos and thin sliced mallard breast. (Leftovers from seared breast sides) then cheese. Repeat second layer. Into the trager pellet grill for 20 minutes or when cheese starts to bubble. 350 degrees. Out of grill top with salsa,sour cream, celantro etc. Utilized an 8 favorite piqua ware and a Griswold 8 big logo skillets.

   We like to shop HiVee in Springfield is we are in town. Pick up the seasons magazine that is put out. Some good recipes in it. Today tried the grilled Hoision chicken thighs recipe. Duck Confit

Pulled out the last of the duck legs from the freezer,28 in all. Packed in salt /sugar/spice for 2 days. Rinsed and dried then into sous vide embalmed in mostly olive oil but some duck fat. 190 degrees for 4 hours moveed it up to 195 for last hour till the legs start to soften. Into the fridge overnight. The bags go back into the freezer to use as I please.Most the time I just pull out a few and eat them whole.

The answer may not lie at the bottom of a glass, but you should always check

      Nothing special cooking but who we cooked for sure was. Mom's 94th birthday. She is in assisted living suffering from dementia.  It's like a broken record visiting with her. Long term memory is starting to fail some, but she cannot remember short term stuff.  We had to get permission to do this in building and was told to remove the hotplate. She has a small place with microwave, fridge, sink and place for coffee pot. She uses nothing there except the fridge to store some stuff she forgets is in there. Bless her heart. She says the food is not good there but always eats, not much but she eats. She can remember fishing and eating channel cat and likes it. sometimes my sisters bring in food to her and orders from a local place. When she did get out, we took her there. I would about gag smelling it when it hit the table it reminded me of a sewer smell. Stinkola I say.  A few weeks back I had been catching channels on an irrigation lake stripping back woolly buggers on the fly rod. I kept six and filled them out trimming them up any red and any yellow. We took a package of three so six fillets a deep skillet and hot plate. Pat made slaw and baked beans. Told mom on phone we were bring lunch. This way she would not invite her friends to eat. We can only wrangle one old lady at a time. So, it was a big surprise and worked out well. She ate well and it tasted really good. One of the girls working there stuck her nose in the door and said the smell ran up the hall to the front where all the other little old men and ladies were eating in the cafeteria. Saying how good it smelled and they wanted fish. 😁  Good day happy birthday mom and thanks for raising me!
