jpb2187 Posted January 20, 2016 Posted January 20, 2016 This weekend I tried clearing out some of the contents of the freezer and seeing what I could come up with. The most promising ingredient I found were the left over bones from the standing rib roast on Christmas Eve. There was still penty of meat on the bones, so I decided to make a big batch of Beef and Barley soup. Took the thawed beef bones and seared them for a minute in a Dutch Oven. Added a little olive oil and sauteed onions, carrots, and celery with some garlic until softened. Deglazed the pan with 2 boxes Beef Stock. Added back the beef bones, 3 bay leaves, some thyme, salt, pepper, and some Lea & Perrins, bring to a boil, then reduce to a simmer. After about two hours - I cooked the barley (1 c.) separately - rinsed, drained, and added to the soup along with diced potatoes. I also removed the bones and pulled the meat off at this step and put back in the soup. I let it cook for about another hour. Skim the excess fat off the top as it cooks. Was a hit. Wife and the 2 Girls all ate it up. (usually one out of group has an issue with dinner it seems most nights) You know its good when the dinner table is quiet! Gavin, rps, MOPanfisher and 3 others 6

MOPanfisher Posted January 20, 2016 Posted January 20, 2016 Corned beef and cabbage tonight. I must confess that I may have an addiction to corned beef and cabbage. Had about a quarter head of cabbage that wouldn't fit into the cook pot so I rough chopped it and made Cole slaw the old fashioned way, sugar, vinegar and since I had nothing better a little milk. My 18 yr old son was drinking the sauce with a spoon a few minutes ago, and I feel like I have eaten way too much. Chief Grey Bear and ness 2

Kudos for giving it a try and also reporting the mixed reviews. I've thought about making tamales, and I love a good one, but making them always seemed like a daunting task.
