'Salad bar gumbo' last night. Totally wining it. Stopped by the store on the way home. Go some chopped onion, celery, bell pepper, chicken and ham from the salad bar. Picked up a bag of frozen shrimp.  Sautéed the veggies in some oil, added herbs and spices then some broth. Simmered a while then added a slurry of Tony Cachere's instant roux -- good stuff to have on hand for this Cajun food lover. Added in the meat and some cooked rice. Really good!

So what is everybodies Super Bowl menu?

I haven't decided yet but have been thinking about keeping it simple. I'll be by myself since the wife and daughter will be at a VBall tourney. 

Im thinking just making a 7 Layer dip and chipping out! Can't get any simplier than that.

One of the items I posted here (by way of a link to Living Well in the Ozarks) was a recipe for queso. At the end of the article I gave away one of my tricks. I make a batch and then fry a couple ponds of chorizo and mix that into the queso. Best way to serve it is over a plate of chips with sides of fresh salsa and guacamole.

Sounds tasty RPS, I love chorizo.  We usually have a super bowl party at a friends house and nobody really cares who is playing. Probably some 7 layer dip, and a bunch of wings, grazing food they call it.

Spatchcock a chicken, kosher salt and pepper overnight in a plastic bag.

Season with coriander, drizzle with olive oil and grill it under a foil wrapped construction block.  Flipping once.

Steamed broccoli and pouch onions.

Cut onions like onion rings salt and pepper in foil pouch.

Butter, ginger, brown sugar and bourbon melted together and poured into pouch.

Grill at same time as chicken.

Yeah, good shortcut. I got it off Amazon. There's also jarred roux.
