MOPanfisher Posted October 22, 2016 Posted October 22, 2016 They turned out pretty well, greens still had a slight crunch to them, not so soft they just vanish. The bacon and little maters were a nice add. The left overs I added a dash if balsamic into and ate them too. Oddly enough either setting for a while or the balsamic or maybe rhe little maters, had given it a slightly sweet flavor. I had intended to add some beet seed, spinach, lettuce and mustard greens to the garden when I planted the turnips, but was already late with it, and the rains were only hours away so I have lots of them to eat now. I do love good dark greens, fresh, wilted, sauteed, on a sammich, whatever.

When I purchased and read Marcella Hazen's book on Italian food, I did not know how much it would change my cooking. You should buy her books. This is an example. A carrot salad. Start with peeled carrots and send them through the big holes on a box grater. Coat them in good EVOO and salt and pepper them. Splash them with the juices from a whole juicy lemon and toss well. First of all we picked all the peppers left in the garden yesterday. The hot ones. Red and green jalopenos and plabano's. I cut off the stems, split them length ways and scraped out the seeds. Put them in the smoker and smoked them for seven hours. Put them in the dehydrator overnight to finish drying them. Used this recipe and wow! Gavin Posted October 25, 2016 Posted October 25, 2016 Did some Spanish Bean Soup yesterday. Turned out well. 1/2lb of dried chick peas soaked overnight, ham bone, plus ham scraps, 2 Q water. Boil & skim foam for about an hour. Add 1/4lb fried salt pork and lightly sautéed onion at that point along with 1/2T of good Spanish or Hungarian Sweet Paprika and a pinch of saffron. Cook & skim till beans are tender. Add some peeled and chopped taters. Adjust salt...did not need any, Slice a dried chorizo in thin rounds and drop in at the end.
