It's burned into your memory forever and everything else is judged against that benchmark. I think there are some variables other than just a recipe sometimes. For example, in college, after going without much food for the best part of a week, I was treated to 'steak and potatoes', which turned out to be beans and franks. Even typing that makes me salivate. Congrats on getting close. Can you pin down what you want to change? I'm not that great at Chinese, but can turn out a decent stir fry. Yep hope you can get it figured out Chief and share it with us. We like Asian food. If it wasn't for cook books I could not get it close. I am figuring out there is real Chinese food and then there is modern American inspired Chinese dishes. Healthy Chinese and unhealthy Chinese. Like them both, BilletHead I've been thinking about this. What I think happened was that I was shocked at how good CC is! As I think about the CC I've had at all the buffets and the one I just fixed, they really all compare to one another. MOPanfisher Posted March 31, 2017 Posted March 31, 2017 I am.in the opposite boat chief, the firest time I ate cashew chicken I thought it was terrible and it has never appealed to me since then. While I realie that Cashew Chicken is about as Chinese as fresh fries there are just too many other options that i do like available at any Chinese type food place for me to try it again.

I wish I could reverse-engineer the Szechuan chicken recipe at Pine and Bamboo garden near my house. Dang. Savory with some chili kick. John
ness Posted March 31, 2017 Author Posted March 31, 2017 I dearly love etoufee. Crayfish being my personal favorite. Yours looks really nice. Very really nice. It's not supposed to be soup. Yeah, it's good. Kind of a spicy gravy, not runny. BTW, I now always use poblano peppers in Cajun stuff. Love the flavor and gentle heat. Green peppers don't agree with me. John
