Johnsfolly Posted April 17, 2017 Posted April 17, 2017 Last night my betterhalf made one of my daughter's favorites, corned beef on the grill, for her 13th bday. She actually braises the meat with carrots and onions along with the corned beef spice. All of this is wrapped in foil and cooked over medium heat. She will crack the foil near the end of the cooking to get a little smoke flavor to the meat. Also wrapped cut potatoes seasoned with oregano, pink salt, and smoked paprika in foil and thrown on the grill as well. Unfortunately this site now restricts the photo size to 2 MB and all my phone pictures are greater than 2.5 MB. So no picture. My betterhalf also made a smores cheesecake with a milk chocolate and hot fudge layer and topped with marshmallow fluff. rps, BilletHead, Deadstream and 1 other 4
Johnsfolly Posted April 17, 2017 Posted April 17, 2017 Tonight I made a spaghetti sauce by sautéing diced onions and minced garlic in olive oil. Once the onions are translucent, I added oregano and sweet basil. Once the spices were cooking I then added a can of fire roasted diced tomatoes and a can of tomato sauce and some red wine. I let the sauce cook a bit on medium low temp to meld the flavors. I cooked some prepared fresh stuffed pasta, mixed four cheese tortellini and sweet Italian ravioli. Once cooked I put the pasta mix in a bowl, added sauce parmesan and mozzarella cheese and put the whole thing into the oven to bake and melt the cheese. While the pasta was cooking, I sliced some of our morels and sauted them in a little olive oil and butter with minced garlic and dried tarragon, S&P. rps, ness and BilletHead 3

rps Posted April 19, 2017 Posted April 19, 2017 Less fancy this evening. I have poached some Harter House bratwurst in Shiner Blonde and will grill them to finish. We will have some tots with those and a chilled asparagus salad with a tomato and onion vinaigrette. ness and BilletHead 2
ness Posted April 20, 2017 Author Posted April 20, 2017 Sometimes just a salad does the trick. Especially when it's got grilled chicken on it. Pretty nice evening last night here in KC. BilletHead and rps 2 John
