The large "picnic" shoulder roast with a skin and fat cap  hit the internal temp of 190 after 12 hours on the charcoal/wood. I  took it off and wrapped it in foil to finish in a 250 oven. After two hours, I took it out of the oven and put the wrapped meat in a brown paper bag, wrapped it in a towel and put it in a cooler before I went to bed.

This morning after my coffee, I pulled the meat. The bone pulled right out and the center was still almost too hot to handle.

Today after errands I will cook up some sauce and make horseradish coleslaw.

Hmong squirrel stew. Very tasty for sure and another that will be repeated.

   Browning of the meat,

 Ready for a couple hours of simmering and when meat falls off the bone we will pick it off,

  After picking it off back in the pot with other good stuff. Here we add bok choy, snow peas, and ground Sichuan peppercorns. Gave it a stir and ten more minutes to cook up the veggies,

  Ladled up into bowls. I had my steamed rice on the side and Pat had her rice underneath the squirrel dish,

    A couple ice cold long necks to wash it down. Top notch my friends,

Had to spread the love today. My bullet smoker has been getting jealous of my big fancy smoker that BH so lovingly bestowed upon me!  I had purchased her just a few months before.  We enjoyed a great time with one another's company.  And then the new kid on the block showed up and she was almost forgotten.  I do fire her up every now and then but not near as often as I used to.

 So I fired up her today and she did not disappoint!  She tenderly and lovingly turned out some of the highest quality smoked meats you'll ever taste in your life!
