RPS am I seeing some carrot in the meatloaf as well? If so do you precook the carrot before adding it to the meat mixture? If not carrot, what have gou added to the mix?

We love a good meatloaf at the Folly household☺! The cheesey polenta is interesting.

Ness, had the exact thing happen in California last summer. Staying at a motel waiting to get ready for my niece's wedding and spoke with a couple at the pool. They had a foreign dialect with their English and I'm sure my "Ozarks" English threw them off. They were from Switzerland, where my paternal great grandparents came from and the lady had lived in the same town. When I pronounced my last name, she said "No, it's pronounced this way". 64 years old and pronounced it wrong all these years.

I've had a couple of years of German. So that helps in our case. If I knew how to post videos I would post the Wilder/Feldman argument from Young Frankenstein☺. Is it Frankenstine or Frankensteen?

I saute onion, carrot, celery, and mushroom and add that to the beef/pork blend along with panko and sour cream. Spices included salt, pepper, smoked paprika, chili powder, and Worcestershire sauce. Blog post here: http://www.ozarkrevenge.com/2016/10/not-your-mothers-meatloaf.html

I am going to call my series of meals the "dirty T shirt" series.

Here is one of our dirty T-shirt dishes from earlier this week. Kielbasa with caramelized onion and green peppers. Served with hash brown potatoes.

My Betterhalf and Livie have made stuffed sourdough a couple of times so far. We have been using brie and mozzarella.

Something that Ness should think about the next time he makes sourdough and if he likes these cheeses. Definitely could stuff with other cheeses that you prefer.

Last night was a venison dish. When I was butchering my doe, I put aside some select pieces of meat including the thin end of the backstraps. I cut the venison as thin as I could. I also sliced some onions, minced garlic, and thinly sliced young portabella mushrooms. I made a mushroom liquor / beef stock using boullion cubes and dried porcini mushrooms.

I browned the venison in two batches with a little olive oil and a pat or two of butter. Added Worchestershire sauce and salt & pepper. I removed the meat and then cooked the onions and mushrooms. Once the onions were translucent, I added back the meat, a little more S&P, a 1/2 cup of red wine (Pine Ridge - Petit Verdot), and the mushroom / beef stock. I covered the dish and let simmer 20 -25 mins. I then added sour cream and smoked paprika. We served the stroganoff with wide egg noodles and topped with chopped parsley.

I like making this dish with beef as well. However, venison adds a greater depth of flavor than you can get with beef. It is this kind of dish that makes me a meat hunter. If you don't like venison this dish could change how you think about venison.

Revived the culture but the last couple weekends just haven’t been able to get to making bread. But it’s coming. Looks good!!

Stop it fellers, everyone is sick at my house and you are making me hungry.  The Dirty T shirt dinner tonight is gonna be chicken noodle soup and grilled cheese.  Crappie fillets in a bowl.in the fridge, fresh venison in the cooler and nobody feels up to eating it.  Besides the cold or whatever this crap is has robbed me of my sense of taste (it does every time) and I will be darned if I am gonna waste such deliciousness when I can't taste it.

A little salmon marinated in soy sauce, brown sugar, garlic powder, lemon pepper and oil. Buttered carrots from the big green guy.

Not a huge salmon guy, but this was pretty good.
