Thanks RPS, Actually not my Idea but subbed the plentiful whites we can get into this time of the year. Freshwater fish can be debugged by -10 degrees freezing for a few days. In this case today to do that the white bass fillets are quick cooked. Quart of water with juice of one lime squeezed in and the lime rinds too. Bring to a simmer for a few minutes then add fillets and bring to a quick boil. Turn off heat and drain water and let fish set in the drained pot tightly covered for another few minutes. Take out and let cool as you prep other ingredients. Since I did not put my own spin on it if I did post a step by step would it be plagiarizing? If not I will do it next go around. It is really good. Guess I could tweak it and post away . grizwilson Posted April 15, 2018 Posted April 15, 2018 Well although as not as fancy as you all, here is the finished product just so you know we finished the job, all in cast iron...but we did use the fancy pot for the beans: ness, Johnsfolly, Terrierman and 3 others 6 “If a cluttered desk is a sign, of a cluttered mind, of what then, is an empty desk a sign?”- Albert Einstein

rps Posted April 15, 2018 Posted April 15, 2018 I just put a slab of corned beef that I soaked overnight through the vacuum seal process. It now hangs from the side of my pickling pot in 180 degree water. I am targeting 6 PM for dinner. Before then I will add pouches of carrots and potatoes. This promises to be an interesting experiment.

I would go for the goat stew over the fish tacos, pickled tilapia is not my deal. BilletHead Posted April 15, 2018 Posted April 15, 2018 Something tried new and then simple fried walleye, I have been eyeballing the dehydrated chanterelle mushrooms in the pantry lately. Wanting to incorporate them into a meal. When rehydrating mushrooms they can be leathery and tough. Today the toughness will be literally beat or ground out of them right into a powder, Fine enough it was like fine flour. Mrs. BilletHead sliced up some potatoes into wedges or steak fries. I tossed the taters with some olive oil, S&P and then she dumped in the mushroom powder. This was all put into a skillet, Skillet put into a preheated 350 degree oven while the fish was cooked. The walleye was dusted in plain lightly seasoned flour. I was wanting to taste walleye not a coating. She fried this quickly. I pulled the taters and they smelled good, Plated it all up and had a side salad. Mighty good, My head is spinning with possibilities with this powder. In scrambled eggs and maybe adding to bread dough . Unlike Morels which I have never had too many to use. Sometimes chanterelles can be so plentiful the saying you have so many they are running out your ears can be true. I have left chants in the woods not picking them. Not any more, BilletHead grizwilson and ness 2 "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!"
