Yeah, it's king of freshwater fish flesh.  There are a lot of princes, but only one king.

Some of my favorite things in this meal,

I know some of you get tired of my wild game but hey we do what we like.  We have hunted mallard breast, foraged hen of the woods mushroom, gardened lettuce, and cooking with Mrs. BilletHead. @Terrierman for turning me on to Don's chuck wagon for batter on shrooms, Thanks buddy!

thumbnail_1104181240_HDR.jpg Sure glad we had duck left from last season because our hunt sucked big time yesterday in the middle zone opener :)

thumbnail_1104181244.jpg  We both made mention we were glad we only fried a few hens. So good I could of ate them until I was foundered.  Ate early enough it will be a hard decision if it will be another salad or a bowl of ice cream later!

It's supposed to be Tortilla soup but one can safely call it taco soup too.

I cubed 3 chicken breast, seasoned with my homemade taco seasoning, and simimmered in a skillet with 1 can chicken broth.

I then transferred to a pot and added: 1 can green chilis, 1 can black beans rinsed and drained, 1 can rotel, 1can fire roasted tomatos, 1 tsp cumin, 1/2 tsp granulated garlic, 1 tsp taco seasoning, 4 c chicken broth, 1 bag frozen corn.

I think next time I may add some cork screw pasta.

Curious what you think of the homemade tortillas. I’ve done corn before but they weren’t that good, and so not worth the trouble.

When I wandered into Mexico bass fishing I must have ate a thousand tortillas. There was a little Mexican blackbird at the lodge that made the best.

I'm not a huge fan of corn but had a guy that worked for me in Houston and he took me to eat at his Mom's one time and she made them and then fried them. She spoke no English but I drank beer, tequila, and talked to her like she did. She just laughed and laughed. She was also kind enough to let me sleep on the couch. I miss those folks.

Well, I ain’t Chief...but while we wait I’ll share what I’ve settled on for seasoning taco meat. No flour, etc. so it’s not pasty. Just a base seasoning you can tweak with cayenne, chipotle, whatever

Ingredients
1 pound ground beef
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground pepper
½ cup water

Directions
1. Brown ground beef and drain fat.
2. Add back meat, seasonings and water and simmer until mixture is almost dry.
