Since Thanksgiving was a bust for us, we are having a partial second chance.  Two pans of homemade dressing, one is my wife's grandmother's recipe (sausage, sage mushrooms), the second small pan is basically the same but with oysters at my request.  Basic cucumber and tomatoes salad with some kind of funky looking lettuce stuff.  Chicken thighs pan fried and my home made cinnamon rolls, which got a bit over raised.  Dressing on top cinnamon rolls on the bottom.  And of course I was wrong on the chicken, the thighs are getting g seared in the skillet then going into sauce with about a metrich tone of mushrooms.  I can live with that.

I love oyster dressing.

I think there may be a story behind this picture.

When I get ready to do a food pic, Kathy usually does a little arranging to make it look better. After several pictures with her hand in them, she’s being extra cautious. But I won’t be deterred!

I’m gonna get myself in trouble.

No pics tonight it was a bit hectic.  Had a couple small pieces of venison backstrap for last year thawed out and soaking in a marinade, and a batch of bread dough rising.  Wife calls and says "two more for supper",  quick trip to the freezer and grabbed a bag with two tenderloins from this year's deer #2, thawed and trimmed them and into the marinade.  Bread baking and snelling so good, then alarm on phone goes off, she has a meeting g to go to she had forgotten about.  Non problem still a full hour to work with.  Squash chunked up and sautéing in butter, drained and seasoned the veniston, heated up the big cast iron skillet.  Quick sear for wife and I, others got a minute or so longer.  Nice and medium rare, tender beyond belief and of course the bread and squash.  If I ever retire I will weigh 400 lbs in a year if I have that much time to cook.  The extras were my daughter and 4 yr old grandson, that boy does like Papas cooking.  Daughter commented that I could feed him a neighborhood cat and he would eat it, we'll yeah because I would make that thing tasty, maybe Korean like a stir fry?

Last night had to be simple. The wife and I had a taxing week. Kielbasa, taters and kraut in one pot. Caramelized a small onion as I browned the sausage and added chicken stock for the braise.

Today I will sous vide a boneless skinless chicken breast that I bought on sale to serve with a dressing and mushroom sage gravy. For the green part, I plan to make a bacon and brussels sprouts hash.

Grampa duty today so lunch was one of his favorites, summer sausage, string cheese and Klausen pickles. But we picked up some chicken thighs and baby carrots to fix for his supper.  Big cast iron skillet came with me for the chicken, will make some gravy for the quick mashed taters, and will cook the carrots in Coca Cola to give them a sweet taste, the boy likes cooked carrots so I pile them on him.  My meals are seldom pretty but they are pretty tasty.

People eat with their nose, eyes, and mouth. Smell and taste trump eyes. Looks are for tempting.
