BilletHead Posted January 12, 2019 Posted January 12, 2019 Pipian Rojo, I made Spanish rice and refried beans for the side. The protein was chicken of the trees . Without my sous chef Mrs. BilletHead it took awhile to prepare. She will get a good meal when she gets home from work and inherit the mess I made today. If I would of had a free hand there would of been some preparing pictures. https://honest-food.net/pipian-rojo-recipe/ I had part of the dried peppers but did have to go to town for the rest. Lady at he grocery store check out freaked and asked me how I could eat hot peppers. She would have nothing to do with me explaining these were flavorful chilies that I would strip out the seeds and blister to bring out that flavor. ness Posted January 12, 2019 Author Posted January 12, 2019 Oh, I love a good red sauce. I’ve made a few simple ones, some using dried Anaheim and/or Poblano chiles from the garden. Haven’t done a more complex one with seeds, etc though. Best sauce I had at a restaurant was made with Guajillos. Anyhoo—tonight just a simple thick pork chop and baked tater. Chop seared in cast iron then finished in a hot oven with a favorite BBQ sauce slathered on. BilletHead 1 John
