I've always have gone the othef way... Sear then into the oven until medium rare.

Maninno's Market had em on sale for 9.99/pound two weeks ago.  Delish!!

I put mine on the down draft cook top for several hours to get the outside dry like a reverse sear kinda thing.  Then into the skillet for a couple minutes a side.   The down draft does a great job drying them out.

Tonight I fixed a meal that 90 percent of my students would not eat on a bet. Grilled chicken panzanella with radicchio, endive, carrots, tomatoes, Kalamata olives and blue cheese.

Your students would be making a poor decision, if they wouldn't eat that.

                   Heck yes I would eat that. I am game at trying about anything now. Wasn't too many years ago some things I wouldn't touch with a ten foot fork. Deer heart tar-tar, livers in Cajun dirty rice are a couple examples.
