Last night's southwestern spiced roast chicken with a bit of guacamole and a side or very fresh cumin corn.

My planned menu for this holiday:

Grill seared skirt steak

Rosemary roasted potatoes

Grilled zucchini

Berries and cream

Marinaded boneless chicken thighs. Oil, rice wine vinegar, smoked paprika, garlic powder, kickin chicken spice mix, sesame oil. Grilled and served with baked beans. Simple but good😁.

Not standard 4th of July fare,  but we’ve had plenty of BBQ in the last week and I wanted to try out the pasta maker I just got. 

Started a Bolognese sauce midday. Used a highly-rated recipe from 'Chef John' on Allrecipes that he says is based on Marcella Hazan's. Kinda different for us with milk, nutmeg, white wine. Simmered about 4 hours.

Did homemade pasta with my new Kitchenaid attachment.

Also bought the fettuccine cutter which made short work of making noodles.

Looks good @ness! Love to eat homemade pasta. Just don't make it often enough to be really good at it. Or at least good enough for it to not be a bit of a chore.

Thanks. My first time doing it and it was less effort than I expected. Did the mixing in the stand mixer. There's a million recipes out there but I just used the basic one from the Kitchen Aid booklet. Used all AP flour, whole eggs salt and water. Happy with the results but will try a semolina version in the future because I just can't leave well enough alone. :D 

The sauce took more effort for sure.
