Gavin Posted August 26, 2019 Posted August 26, 2019 Carnitas tonight. Homemade guacamole, lime pickled red onion, charred pineapple. Was good! Did the meat in the instapot then tossed under the broiler. rps, Mitch f, Travis Swift and 4 others 7

ness Posted August 28, 2019 Author Posted August 28, 2019 Last weekend Kathy said she thought shrimp tacos sounded good, and I agreed. So, I set out to make that happen tonight. Had a good idea how I wanted to go about it: slightly spicy shrimp, mango salsa, flour tortillas and some kind of spiced up mayo. Did a marinade of canola oil, chipotle powder, ancho chile powder, garlic powder and salt. Mango salsa was diced mango, minced red onion, minced jalapeño and lime juice. The mango wasn’t ripe/sweet enough, the lime juice overpowered things (1/2 lime) and the red onion was too sharp, so I set about tuning it up. Added a very ripe peach that was peeled and diced. Some white sugar to counteract the tartness of the lime and a little salt to round it all out. Made a quick sauce of mayo, Louisiana hot sauce and some chipotle pepper. Got the cast iron grill pretty hot and got some grill marks on the flour tortillas. Did the shrimp and pulled it all togedda. Pretty tasty if I do say so myself. Travis Swift Posted August 28, 2019 Posted August 28, 2019 Mom and the little one wanted breakfast for dinner last night so i fired up the blackstone. I can't have carbs so they made cream cheese cinnamon pancakes and i had sausage and eggs (not pictured). Had it all cooked in less than about 10 minutes and only had 2 dishes to clean. I'm digging this thing for sure so far! Flysmallie, snagged in outlet 3, Johnsfolly and 3 others 6
