I've never tried deer heart, but I would if I was there NOW.   Looks delicious.  

 

The gumbo was such a hit around here, everyone in the house is hollering for it, so I guess we'll do it again tonight.  😋

      You know Randy I have never eaten beef heart! Like all wild meat that isn't overcooked it was tender and mild. Hope someone else on here will tell us.

Found a recipe Friday in the New York Times. Made it for tonight. Goat cheese and asparagus tart.

I got my knee replaced 2/17. Been home since then and working from home the last two weeks because I can’t drive yet. To say I’m sick of being cooped up here would be a vast understatement. Got the word today that we’re to stay home if we’re able to work remotely. Oh boy. 
 

Meanwhile, all this market turmoil directly affects what I do at the bank. Big time. Fed cut their rate to near zero today and that has far-reaching effects on the credit markets and what we’re doing. I was there in ‘87, for 9/11, and 2008. None of those were like this. So, I made pizza today 😄

Made the skins

Loaded them with a simple no-cook tomato sauce of crushed tomatoes, salt, and a dash of red pepper flakes. Seasoned ground beef, mushrooms and black olives. Dressed with some olive oil and topped with mozzarella.

Dang. Things came together very well.  Used a lower hydration and let them rise at room temp longer. One of the best outcomes ever.

How do you store those vacuum packed cheese packs? No refrigerator right?

                    In Fridge. It lasts along time this way. Never had a piece get any mold on it. I sometimes wonder if the smoke layer coats it and helps?
