Kathy does eggs what she calls fry-poached. A little oil in the skillet, and a little water too. Crack in the eggs, cover and cook. Easier to get just like we like them, which is just slightly runny without any crispy white. Love this is technique. Used it this morning.

Basted is the term I use for that method.  Yeah they're good that way.

           Scored on 38 morels this afternoon. We cooked them in the Holy Wok over charcoal and  chunk of white oak. Split the big ones and left the smaller ones whole. Melt some butter and mince some garlic put in a bowl. Add some S&P and mix well. Dump in your morels and toss well coating all well. The Holy Wok was hot and ready. Dump in the morels. Give it a stir.

 When it begins to crust and crisp the outsides it is done. Finished product sure doesent look like 38 of them but so good.thumbnail_0405201555_HDR.jpg

         The morels went well with tenderized pork loin chicken fried , Mashed potatoes and sweet corn we put up last Spring,

Tonight was about corn meal. Honey skillet cornbread made in a vintage Erie skillet.

Po boy sandwiches. Corn meal coated crappie and shrimp. Also shrimp, yellow bell pepper, and capers in a cajun aioli.

I'm baking chicken thighs in brown rice, french green beans, mushroom soup, milk and cheese.  Ozarks hot dish in other words.  Waiting now for the thighs to get brown.
