Trout is one fish I actually prefer baked a certain way versus fried.

Butter and season each side of a fillet with lemon pepper.
Wrap in foil with a half a slice of bacon on top and bake at 350 degrees in an oven for 15 minutes.
After 15 minutes, remove, open foil up on bacon side, raise rack up and broil the bacon for a few minutes until it crisps up.

My fiance isn't a big fish eater and even she loves eating them prepared like that.

Never enjoyed eating trout. Wife likes them whole baked in oven. Found a rcpe on food network for smoked trout dip. 16 reviews all 5 star. Gave it a try. Wouldn't have it any other way now. I didn't put it in food processor though, just made the mix and put in chunked up smoked trout. Gastons resort has a super simple smoked trout recipe.

The catch and keep lakes....I don't know about.

I'm not a huge fan either, but I must say... I don't know why, but the Germans and Italians make some darn good baked trout.  They also know how to debone it at the table with two large spoons.  Pretty crazy to watch.  Best trout I had was in the Austrian Alps in a little hotel restaurant I stayed at there.  Before you ask, I'm not rich, Uncle Sam sent me to Germany.  Now that I think about it, maybe it was the beer that made it taste good. :)

My fav trout recipe.....Preheat oven.  butter, salt, pepper, wrap in foil....place trout fish side down in trash can/dog bowl.  Go catch crappie, fillet, bread, fry, salt.  YUM!!!!  This recipe is also great for salmon, and white bass, as well as a variety of ducks and geese.
