You lost me at "coconut".  I really like to grill them anymore.  Sheet cake pan, line with foil, paint the fillets with melted butter (I add garlic powder and a dash of lemon to the butter).  Then shake on seasoning of your choice, or do some with one flavor and some with another.  I use some cajun, some greek, or mix and match different seasonings.  Put the pan on your grill (oven would work just fine) until the fish turns white and flakes apart.

My personal favorite recipe for crappie is simply cut fillets in to 2" chunks. I take cornmeal add some Lawry's season salt and lemon pepper in big sandwich bag add fillets, shake to coat and fry in 1/2 inch of 50/50 olive and canola oil. Fry to golden brown turning once. If ever any leftover "vary rare" put in sandwich bag for nice snack cold or broil on low for couple minutes turning once.

I like fish best the old fashioned way, deep fried in cornmeal. However, I do some in Italian bread crumbs and wife and some of the family like that. it is pretty good.

I'm going to be inquiring about spoonbill recipes this spring.  I'm going to give it a try for the first time.  I've done some online research, but figure someone has a better idea.

The only way I ever had spoonbill that I liked was a slab of it in the smoker, covered with whatever spices you like, enough to hide the normal flavor of the meat.  I have had it cubed and fried several times and don't care if I never eat it again.  Now if I ad one I would give it a try again, by meticulously cleaning it to remove the red meat, and maybe brine it first, then fry a little bit, and smoke the rest.

Recently I have been blackening all my crappie. I dip the fillets in melted butter, sprinkle Zatarians blacken seasoning. preheat a cast iron skillet and cook each side about 45 seconds.
