This procedure albeit with a slightly different system is one of the recommended ways of releasing those deep water bottom fish that @Quillback was talking about. Actually his moniker i believe - a quillback rockfish as well as other rockfish. 

To answer @fishinwrench a little further, not all fish have air or swim bladders. For example, a shark pulled from the depths would not have this issue since it is primarily their livers that provide buoyancy and not a gas filled bladder.

Always wondered why sharks would not bloat, now I know.  Used to run into big schools of spiny dogfish while salmon fishing in Puget Sound.  Bait stealing thugs, I hated those things.  Never did try and clean one and eat it, but I hear in Europe they are sold in fish and chip shops.

I just want to catch one :D.

I also have heard about them being used for fish and chips. I have eaten a couple of the sustainable shark species. I liked them. We didn't keep the spiny dogfish that my wife caught back in March. Maybe I'll keep one and let you know how it is if I actually can keep one on the hook.

They were annoyingly abundant in the sound.  

I have eaten blue shark, they used to sell it in the stores when I lived in Mass.  It was pretty good grilled.

I like mako, but their populations were in a state of decline. The Atlantic sharpnose sharks we caught in VA were both abundant and delicious.

Brought home some fat hammerhead steaks from a trip in the gulf. I didn't catch it but it was a 7 footer and had plenty to go around. I grilled them and they were delicious.

Hammerheads and their kin are just a cool fish. Closest I came to catching one was my brother landing a small bonnethead shark.
