It depends on what your budget is.  I am sure all of the major brands are pretty good if you're willing to spend about a 1000 bucks.  Make sure to get the 12 footer, you will be happier.  Also think about what you want most and what you will be doing most.  I opted for a boat with a very open plan, and no dry storage, because i like to have multiple rods laid out in front of me.  Its very wide and stable, but slow.  Some boats have more of a cockpit type feel to them, and dry storage compartments.  If you have a bunch of gear though, you may just opt for a small canoe.

Check out the feel free kayaks.  They make some pretty stable kayaks that have great seats.

I have a Vibe Seaghots 110 but was looking to upgrade to something with a higher weight limit and higher seat. The Gravity Seats on the Feel Frees look awesome, they just have a low back. They also have a wheel in the keel to make transport easier. I just didn't want to have to jump up to a 13 footer for the weight limit I want. I'm wanting at least 500# so I'm focusing on a Nucanoe Frontier, probably 12 ft.

I have two Wilderness Ride 115 and they are great. I have had one for 8 years and loved it and you can stand in them on calmer water. I bought one for my wife who had never been in a kayak and we took it on a 3 day Buffalo river trip and she only turned over once, first day. They are very stable and easy to paddle. A little heavy buy you can carry a ton of stuff for multi day trips, I think it say 500 pound capacity. I saw one on facebook market place the other day for $850 and it had the good airpro seat, a $439 option. It was in Springdale, AR. They are really tough also, my fell off the trailer at 60 mph and only got a few extra scratches. Besides all the room to carry you stuff you can remove the seat easily and have it for a camp chair for lunch or to use at night on multi-day trips. Here is a picture of what I was able to carry on the first three day trip I took on it. I have since found out I only need about half that stuff but added a ice chest for cold beer.

I have a pescador.  If I had it to do over again I'd be looking at a Coosa or something similar.  The pescador is a little narrow for optimum stability and the seat is dead low.  But for the $$$ definitely a good buy.

The Nu Canoe Frontier 12 looks very stable. I'm not sure how maneuverable it would be? And it's EXPENSIVE. $1600 plus

You could get into a Jackson Bite for less than $1,000. Haven't paddled one, and it weighs as much or more than my 17' tandem canoe.

I finally got my quail hunting gear down to a vest and a few shells.  And a 20 gauge 1100.  Eat an apple we picked on the walk.  The good old days.

I have a bite.  I think 800 bucks.  Its a good boat.  Wide,  stable,  and slow just like me.  Its like 75# I think.  I have no trouble getting on a car or truck.
