PLEASE share with us how you prepare the heart. Last year in deer camp, we made liver and onions from one of the deer we killed.  The first time I had ever eaten deer liver.  I love beef liver and chicken livers, but for some reason, all organs were left with the gut pile.  I kicked myself for having discarded all of those livers over all of those years.  Which got me to thinking - what else am I wasting.  I plan on keeping the liver and the heart this year, and would love to see you your prepare yours...

   We don't do the liver but do the heart. Can be used many ways. The key to however you fix it is to not let it go beyond medium rare.  Just season with S&P and sear the sides. Cut thick and remove all the gristle or what would be the hard parts of the ventricles.  It isn't going to hurt you to eat it raw. We have eaten deer heart tar tar with raw egg. I was more afraid of the raw egg.  I will probably let the heart hit the cast iron skillet for a few seconds in the morning while Pat does eggs over easy. Some toast and breakfast will be served.

That's a dandy buck for sure.  And spot on with the directions for the heat.  Cleaning all the fat and connective tissue out is key.  S and P and sear in smoking hot skillet.  Gotta be dang near raw in middle.

Congratulations Marty, super deer right there. 

I dredge heart in flour with a little granulated garlic added to the S&P.  And then flash fry.

Jim, I do liver the same way only sliced about 1/2" thick.  Hot bacon grease is the best.  Still pink in the middle is done.  Don't forget your potatoes and onions!

That’s a good one there. Congrats. I almost skipped work to go out this beautiful morning, but work was priority. Bass tournament tomorrow, and maybe hunt sunday.

Nice northern corn fed buck.  Youth hunting at farm in morning with Grandson.  Rut is on here.  Ran the cameras here at farm tonight when we got here.  Pics all trailing, scraping, fighting, and posing.  Looks like I have one good morning before rain.
