    Italian's generally don't add cheese to a fish dish. Nothing is wrong with doing so, IMO, but it is not the norm.

    Would go with cast iron instead of ceramic. You cant kill it.

    Looks good! At the restaurant we added an ounce or two of béchamel to the white clam sauce. It gives the sauce enough body to stick to the noodles without getting too heavy.
  6. The black flies and mosquito's can get pretty thick...100% deet and cover up. The Hexagenia hatch should be in full swing right about now. Not sure if it will last until you get there.
  7. I wouldn't be too concerned. Those trout are spread all over the river. Some friends caught tons of trout and kept several limits of rainbows between Akers Ferry & Round Spring last weekend. Akers to Round is usually the worst fishing on the river (not stocked with trout, and too cold for good bass fishing), but it is fishing really well for trout right now. Cedar to Akers should be on fire now too.

  9. It is a bit crazy down there. You should not need a 40' boat to run that lake safely on the weekend, but you do.
  10. Will be years in the making, but it's the ranch were the Beatles stayed. Natural for a tourist attraction.

    Fail tonight. Pork chops stuffed with Spinach Artichoke dip. Might try something hotter and denser next time. Thinking a slice of pepper jack and a charred poblano peppers.

    Will have to try some of those potatoe salad recipes. Our standard is pretty good and a no brainier. 5lbs or red potatoes 3/4 in cubes. Boil till done, then toss in an ice bath until cool and drain. Add a pound of cooked bacon and a bunch or two of green onions all diced. Dress with ranch from a bottle, Cajun season to taste.

    Breaking in the new Weber with some steaks and lobster tails. Pushed the old one to the curb an hour ago and it's already gone.
  19. Haven't seen one one of those break before. L bracket might work, but probably drop a long bolt though the gunwale, through the seat and bracket then cinch it up tight. Drill a dowel out to cover exposed threads.
  20. Good for you! Solo floating is not for the timid. Great experience always. Fish all you want, think about things. Great mental cleanser.

    1c EVO, 1/2C Sweet Onion, 4 Hearts of Palm, Can of Artichoke Hearts in water. 1/2C Sun Dried Tomatoes, 1/2t red pepper flakes, 1/2t oregano. 1C Vodka. Sauté add Vodka at the end and reduce for a minute or two. Pour over fried fish.
  24. Good for you. Nice trip. Would start start with a "Hello Brother, and a chorus of you got a friend in Jesus...if that does not work clean the clip out of you auto while cackling wildly.

    All looks good! Usually score and marinate whole red snapper in mojo criollo (citrus based from the Mexican market) stuff with Cilantro & Lime, then grill whole. Serve will some Cuban Black Beans & Rice, fried Plantain(darker ones are better) and some Salsa. Whole fish taste better than fillets.
