I don’t normally cook much this time of year, usually working 60+ until April 10-11 but only 45 a week for the last 3 weeks. Have been cleaning out the freezer vac pacs though! Pulled out some ribs for a couple dinners, and some smoked round roast for a dinner and sandwich slices last week, Pulled out a bunch of home made lasagna last weekend. Wife thawed a 3 lb chunk of pork loin & ground it for enchilladas on Monday, Was better than chicken. My turn tonight. Bag of halved Cornish hens I cooked for a dinner party last December, must go steamed green beans, boxed mashed tater, and the emergency cranberries from the fridge. Frozen bag of halved pre-cooked hens got dropped in a big pot to simmer for an hour, then out of the bag, and into a pre heated oven while the sides cooked. Was good, except for the boxed mashed taters. My 10yr old complained, but ate em.

Brings back memories!.... Eat this with my Pop-Pop Eel fishing, or working in the Eel Trap/Weir or sitting on the tailgate of his Power Wagon watching baseball on at my elementary school ball field as a kid.

Here’s a couple recent meals:

Stir fry (again). We like it, comes together quickly

Had a hankering for biscuits and gravy. Used the canned biscuits which barely cut it but are easy and we had them on hand. Rices medium sausage. My favorite but it’s getting hard to find.

We have no issue using the canned biscuits in a pinch :D. Looks good buddy! Since all our hens are laying, we would have thrown a over easy egg on top or those biscuits. Why I am gaining weight during this pandemic :unsure:.
