Sous vide the legs and wings. Pat the skin dry and semi-dry fry. The skin will crisp like a potato chip

Got the itch for some German food, so I cooked up Jaegerschnitzel, which is essentially weinerschnitzel, which is essentially a fried pork cutlet, with a mushroom sauce. Pounded a couple thin chops even thinner, breaded with some panko and fried in vegetable oil. Sauce was baby portabellos, a little red wine and a chicken gravy from the deli section of the store. Served with a side of German red cabbage and some mashed taters. Turned out pretty good. I did this with pheasant a couple weekends ago. That was good too.

He was right to not want to get into the pot. Look what happened last night to his brothers :grin:. And a side of sweet corn with Old Bay and a roasted sweet potato.Resized_20200615_175251.jpeg

BTW, tonight's baked chicken with roasted potatoes and mushrooms and a sauteed Brussels sprouts side.

Finally getring enough mobility back to play a little more and with jist wife and we can cook more to our liking.  Wife found a nice skirt steak she had saved, so season it up with some house seasoning and a good coating of chili lime seasoning, while cast iron skillet was heating on the grill she sliced some peaches into quarters and seasoned with vanilla sugar, and made a wilted letruce salad, I did contribute also with a quick garlic flat bread.  Sometimes things just come together, happy bellies right now.  Sorry for blurry pic but too late now to take another!
