My mom made apple pie by memory for so many years, that my wife said she would never make one as it wouldn't be the same.  Mom passed away at end of May this year so my wife has taken it upon herself to begin making Apple Pie occasionally.  Completely different kind of Apple Pie, and though different they are delicious, I would think my mom would have been proud of her.

My birthday dinner. Seared swordfish with a mango salsa and a twice baked potato. Nancy made Boston cream pie for the dessert.

I've really had the itch for seafood lately, so Saturday night we drove across town to a pretty nice restaurant that has an outdoor seating area. I can't remember the last time I ate *at* a restaurant. Looked over the menu and decided to have two appetizers and soup instead of a main course. Soup was clam chowder and it was excellent. Also got crab cakes and lobster rolls. First problem was the appetizer portions were huge. Each was big enough for a meal. 

Dove into the lobster rolls first, because I love them and haven't had one in a loooong time. If there was lobster in there I couldn't find it or taste it. Shredded if it was in there. And, there were diced cucumbers in there. Can't stand that. A total bust, so on to the Crab cakes.

If there was crab in there I couldn't find it or taste it.  Shredded if it was in there. Lotsa crunchy vegetables. The aioli and breading were good. I was tempted to complain, but I know these guys are hanging on by their fingernails and we've been there before and it was excellent, so I let it go.

So, seafood itch un-scratched we did a linguine with scallops in a garlic cream and Parmesan sauce the other night. Pretty tasty.

I made a brine with pink salt, water, peach cider, star anise, brown sugar, and smoked paprika. Brined sliced pork loin for a few hours. Served with acorn squash and green beans with bacon and onions. After cooking the pork, I coated the top with red pepper jelly and peach cider.
