And I've spatchcocked before, but in the the oven, but didn't this time. This was the first bird I've done on the egg. Even without that, far and away the best bird I've ever stuffed in my face . . . juicy, smoked, flavor with the injections, the dry rub on the skin. It all came together. Smartest move was getting the Weber Connect probe deal, which I resisted before any fancy thermometer crap. Took all the guess work out of the equation. My 87 year old father in law approved. I still have a hard time figuring out why some of you that are able do not go out and do more of your part in the food chain other than going to the grocery store? Taking more into your hands other than slapping meat on the stove or grill. I do realize because of health or lacking knowledge can keep some from doing this. You all are outdoorsmen here, right? I know many of you here. Wonder who has done the most variety of outdoor opportunities on this forum? Young squirrel is as tender as chicken. I shot one this morning and thawed four others. The master of the gravy did the honors of that as I did the frying. There are two new things in the photo. One never done and one seldom done. @budman This one is for you and thanks for the tip. I do more than my fair share, but it isn't always a balls-out stellar adventure, followed by an eclectic cooking ordeal worthy of impressing anyone with. Besides, some critters out there aren't really worth the trouble unless I'm broke and on the verge of starvation. Wild Turkey?....no thanks. Ducks & Geese?.....hell anything soaked/marinated and prepped in that fashion is gonna be tasty and make a fine turd....even a crow or buzzard would do. It only took 1.5 hours of working on somebody else's boat to fund a double-feast for 8 this week....and we're still picking at delicious leftovers. 😊 Do 1.5 hours in the woods and even if you score good..... you've still gotta go to the grocery store to supplement the meal. How much do you do for yourself instead of relying on others kind of stuff? Heck yes, we need to go to store for things. Why not do more for yourself? Take you for example. Grow your own tobacco, brew your own whisky . Heck we could do more here. Its gratifying to DIY. I guarantee if you ruin a wild turkey, it is your fault. That or someone else has and you ate it. Ducks and geese? I sure watched you eat goose fajitas and went back for more. Nothing soaked or marinated there. I can sear a duck breast on coals with just a bit of salt and make you want more. Did you ruin some or did someone else ruin it for you? I did not post this to pick on anyone just a bit of food for thought and more possible outdoor time. We are losing hunters every year. Why not interest a new hunter and let them reap the rewards? Just since you don't seem to like some if not all wild game why be little those who like to eat it? I assumed that some secret prep work was involved there. Like I've told ya in the past.....I attempted cooking ducks myself several times, and it turned out to be "survival food". Not anything I was looking forward to doing again. Big hit, thanks! Goes great with fried catfish. I had some of the biggest and best pecans I've ever had too, crumbled some into the slaw on my plate only and liked it even better! BilletHead and Johnsfolly 2 I can't dance like I used to.

So far the goals my boss set for me were confirmed as being "Well done" for this year and he's only paid me out through September. He hasn't even seen the rest of the year yet. So I'd say I've done pretty well on the goals department. I'll be having another steak for dinner thank you very much.... fishinwrench 1
