rps Posted March 20, 2022 Share Posted March 20, 2022 Baked some cod with a toasted crumb crust and added a side of asparagus risotto. Avocado with balsamic salad. The cod was chewy and dry. Sue and Livie had been working on the pork soup from ribs and other pork bones and meat since 1 pm. Then made the dough then prepared the dumplings. Steamed just as the pork belly was close to being done. A vegetable would have been a nice addition but not expected after all the effort to make everything else. BilletHead Posted March 22, 2022 Share Posted March 22, 2022 Back to making sourdough after a long hiatus. Dutch oven cooking vessel. I didn't realize how much I missed doing this. The recipe I followed called for more starter and flour than the ones I did before. 13 hours first raise and three second raise. Looked like allot of dough. I didn't think It would have fit cooking in my 8 Dutch oven. No #10 so I sized up to a #12 and glad I did. It is a beast of a loaf. 11 inches in diameter and 4.5 inches tall. #10 would have been perfect. I can't believe I have three 8 and a 12 and no 10. Need to remedy that! Will slice when Pat gets' home from work.
