Looks hotter than it is. I can just barely eat stuff hotter than most women so that I still look cool. 

The cheeses are not hot at all. At least I didn't think so. I actually bought them to make some pimento cheese after talking about it the other day. I just haven't done it yet so I put some on the pizza.

I tend to.use a spicy Arribata sauce instead of pizza sauce, gives it just a little kick.  Then whatever cheeses, meats or anything lying around.  I have always used flour tortillas because I like them better, and made them in a skillet.  At one point my son was fascinated because I put a tortilla on top as well sort of a pizza pie, was messy (mostly because I had way too much stuff in it) but delicious.

Mark Bitman. I own one of his cookbooks. The one about world wide recipes I think.

Pimento Cheese

1 can Pimento's

1/2 tsp Granulated Garlic

1/2 tsp Granulated Onion

1/2 tsp Black Pepper

 2/3 c mayo

 

Measured portions maybe altered to taste. 

Ok I just made a batch. I tweeked the recipe again. 

I used about 1 TBS of Cholula Chipotle instead of a half tsp of green pepper sauce. 

I also also used a 1/3c each of Miracle Whip and the Just Mayo I was telling you guys about. 

I also left out the Pimento's.

I used Pepper Jack and Habanero cheeses with a bit of Colby Jack thrown in. 

Holy Cow! I believe I'll be having grilled cheese for supper!
