Johnsfolly Posted October 9, 2016 Posted October 9, 2016 Tonight's dinner was roasted chicken, porcini risotto, and lion's mane and oyster mushrooms. Kind of monochromatic. I found the lion's manes last Sunday and some more this morning. The larger older one was a little bitter. The younger fresh ones were sweet and meaty. My daughter thought they were a little too fuzzy. rps 1
BilletHead Posted October 9, 2016 Posted October 9, 2016 Beautiful weekend for eating , Going to start with Chiles Rellenos. First time we have made them. Used poblano peppers. Some from our garden and some from the store. I roasted the peppers on the gas grill until blistered and blackened, Put them in a paper sack to steam. When cooled off I slipped off the skins, made a slit and cleaned out the innards and seeds. While I was doing this the Mrs. Made the stuffing. Ground venison, toasted and chopped pine nuts, chopped golden raisins, crushed cloves, chopped onion, S&P, cinnamon, garlic,and tomato puree. Brown the venison add the rest and cook up. I made the sauce. Consisted of Jalapenos, garlic, onion, and tomato puree. This was all blended up to a sauce and then I cooked it in a couple tablespoons of goose fat. While it was simmering we stuffed the chilies with the meat mixture. Dusted in flour. Made up a batter. Next steps were a pain and a mess. I whisked several egg whites and some salt until peaks appeared. Then slowly added the yellows and whisked more until we had a frothy mix. Heated up some oil, dipped the stuffed peppers in the batter and fried em up. Did this outside and glad we did. Batter strung all over the back porch Results outstanding, Today a bit more simple. Cut up some wild turkey breast into one inch cubes. S&P. Cooked over the charcoal grill in the Holy Wok, When browned and done added some hen of the woods mushrooms that had been sauteed in butter and onions. Cooked awhile longer. While I was doing this the Mrs. cooked some frozen stir fry veggies in the house. It all was then put together with some bottled spicy sichuan sauce and heated up good. ness Posted October 10, 2016 Author Posted October 10, 2016 Had the day off and went to a game preserve to warm up for the bird season. Brought home 2, about a third of what I should have. Made a quick pheasant stock from the bones. Browned the breasts, added flour then Marsala and the stock. Braised the breasts with mushrooms. Finished with a knob of butter and a little sugar. Served it over rice. These guys did most of the work, and enjoyed some of the spoils. Terrierman, BilletHead, Gavin and 4 others 7 John

I bet you were in the recliner taking pictures of the dogs. Fold that recliner up and hit the woods. The hens are up and growing . I showed our dog Sadie your dogs. And after driving back home I hoofed it another hundred feet or so from the car to pick up that basket of mushrooms at the store. Then I drove over to the liquor store and walked all the way to the back for the Marsala. That's foraging in the suburbs ? Chief Grey Bear, BilletHead, rps and 1 other 4 John

Heck I even have to go to Wal-Mart once and awhile. Need to make a Hy Vee run. I am out of Moody Blue cheese . ness Posted October 11, 2016 Author Posted October 11, 2016 I think Sadie might enjoy a day in the subdivision. Bring her up. No pressure, no duties, no critters. Just couches and doggy treats, or the occasional bit of people food. Just a little warning if you're coming: My dawg Max occasionally humps without permission. But I guess that's ok, at least according to what I'm hearing lately. Terrierman, tho1mas and BilletHead 3 John
