Walleyedmike Posted December 22, 2016 Posted December 22, 2016 So, a couple of weeks ago a local grocery store had pork loins on sale for $1.29 a pound with a limit of two. I went in to pick up a couple, which I was going to cut up into pork chops, and cure the rest for some Canadian bacon and smoked chops.They said they were running low and I could only buy one. That kind of ticked me off, but I went back the next day and bought two more loins. I cut off like ten raw pork chops and put the rest of the meat in a simple cure of Morton's Tender Quick and brown sugar for ten days. I braved the bitter cold and smoked the meat Saturday, and let it rest until tonight. After enjoying a grilled steak with a baked potato and Cesar's salad, I sliced and packaged the Canadian bacon. It's not goose breast ham, but it turned out pretty dang good! I need to learn to do those butcher's knots that BilletHead does to shape it a little better in the future. Ended up with twenty-five 1/2 lb packs of Canadian Bacon, seven twin packs of smoked chops and four packs of ends and pieces for baked beans and such. That was a cluster and it took the Mrs and I some wrestling to get it done. That and of course the picture is of the good side of the tie up. You should of seen the other side. .
