Sichuan crispy fried carp today. Since the BilletHeads were out of carp :) we went to a overstocked pond where the bass were energetic to hit the flies we were casting to them. Kept four for the dish. http://honest-food.net/fish-and-seafood-recipes/sichuan-crispy-fried-carp/

Pretty darned tasty and I recommended it. Out of the marinade ready to be dredged in flour,

When the fish were done it was on to making the sauce. Ginger, onions, garlic and hot peppers getting all worked up,

Remaining sauce stuff brought to a boil and then a couple more minutes to finish,

  Plated up!

Still got the tiny bones but if the fish is big enough those tiny bones are not so tiny. White as snow meat :)

I'm guessing these in the 30+ range.  I'll bring the cast iron!

I would love to find a spot with grass carp. I've caught common carp but never a grass carp. How could they not fight well seeing that they look like a torpedo.

Grass carp are probably the cleanest flesh of the carps.  We at one point raised some in a 7 acre lake and a couple rearing ponds as part of a semi commercial catfish operation.  Eventually caught one on a rapala of all things, wasn't as good of a fight as a regular carp.  Shot several trying to remove some of them later on.  Of you ever have them in a pond and try to seine them it is quite a show, they can put salmon to shame with their jumping ability, and can clear the top of a seine with room to spare.

Pan first some scallops in butter last night. Looked great, wife loved it. Kids did not like the texture, but ate it anyway. Best result you can get with kids and new to them foods mostly.

My daughter was a trooper when it came to food and loves crab. My boys wouldn't, and still won't, touch the stuff. When we went to Red "Monster" it was always chicken strips for them.
