BilletHead Posted July 16, 2017 Posted July 16, 2017 Fish tacos , well dome RPS, Today we had fresh sweet corn from down the road, green beans the Mrs. did some trading/bartering for at work with some of our produce for some that others had grown. The meat part was wild fried turkey procured from the woods behind the house . Johnsfolly Posted July 16, 2017 Posted July 16, 2017 Sort of a monochromatic meal. Roasted pork loin. Sweet corn from Amish country which at the prices my wife gets is almost bartering or stealing☺. Then the pumpkin spaetzle with a little butter, granulated garlic, and grated parmesan. Nothing special to look at but a tasty meal. grizwilson, BilletHead, ness and 1 other 4

Johnsfolly Posted July 18, 2017 Posted July 18, 2017 My wife picked up some beets and we had a pork roast in-house. I like pairing apricots with chanterelles (you’ve heard this before). I decided dinner was going to be a pork roast with fruit and mushroom with the beets and mashed potatoes. I made a rub consisting of smoked paprika, chili powder, granulated garlic, salt, pepper, and brown sugar. I rubbed the roast and seared all sides in the dutch oven. Once seared, I added onion and peeled garlic. The braising liquid was vegetable stock infused with dried porcini mushrooms and two cans of local cream ale (Bur Oak – Frank’s Cream Ale). I felt that the slight sweetness of the cream ale would go well with the rest of the flavors. We braised the meat at 275 for about 3 hours (wife took care of this while I was at work). My daughter and I chopped onions, chanterelles, dried apricots and cranberries. Sauted everything and then added the pulled meat from the roast. I cooked the sliced beets and just as they were tender, poured off the liquid and added a splash of white wine vinegar, S&P, and fresh ground nutmeg. Served it all with mashed potatoes. I coated it in some blackened seasoning and then put it in an aluminum foil boat of butter over some hot coals. I was going to take a picture and then it was gone. If you think that is the truth you would be wrong! So the tomatoes are finally coming in. Not the best crop but a crop none the less.
