RPS So sorry to hear about your loss. I hope that your wife is able to find peace. Our prayers are with you and your family.

           My sincerest apologies to Ness for forgetting a post on soda bread almost two years old. The post not the bread being two years old,

  So I made a mess and a loaf of soda bread from his recipe.  I am not a bread maker and don't pretend to be. Made to the recipe specs. Used the electrified mixer to do the work. My batch needed more flour before I could knead it to it's final shape. Lesson one do not try to pull it out of mixer while it is sticky! Back in it went for setting up better. Out it came and kneaded ten plus times to somewhat of a ball. Did the knife X before I remembered to sprinkle sugar on the top. Lesson two remember to read the instructions again and again. I thought i had everything but did not according to instructions. No parchment which I thought I had. Lesson three make sure if you want to make it just like the instructions make sure you have everything. So onto a greased baking pan. Baked according to instructions and pulled out. Stuck a bamboo skewer into the thing and it came out clean. Let it cool and busted through the crust and sliced, A bit doughy in the center. Lesson four, make sure you test the exact middle. So back into oven to finish. When done to perfection we tried it. Rock hard on the outside but nice on the inside. Kind of like the BilletHead himself :). Tasty too. We kind of decimated the loaf with the Mrs. eating more. I give it a thumbs up and will do it again. One final lesson which will be number five. 

   Nesses' instructions need to be tweaked by me on my try. I can officially say I made a loaf of bread :) ,

Alright, last night I made this thing called a hamburger. I placed it on the last English muffin I had, because Ruby ate the second to last one while I wasn’t looking. Cooked indoors in cast iron with Montreal seasoning. I haven’t made a burger in forever and it sure tasted good with one of my favorite sauces.

Continuing on the clean out the freezerr plan, I dug out some shrimp and cobbled together a shrimp and grits dish. Sautéed onion, added a few spices, then tomato paste and some chicken stock. Reduced it, then in went the shrimp with more of the seasonings. Swirled in some butter at the end. Grits with Parmesan, butter and a little cream. Pretty good for just winging it.

Haven't made too many home cooked meals lately and am now in Maryland eating out or making sandwiches or leftovers in the hotel. We did have a food related experience last Friday night. We met up with and spent some time with Hank Shaw at the Logboat brewery in Columbia. Also picked up his new cookbook with upland bird and small game recipes. We had a great time. Oh and he told me that he has probably caught more than 200 species of fish. Since I am at 134 confirmed species, I have some catching up to do but am up to the challenge :)!

Been missing more dinnertimes than I have made here lately.  Tonight I got some lukewarm warm hamburger helper of some sort, and some cold skillet cooked broccoli, added a few KalaMata olives to class it up, but I already ate them.  This meal is approved by no one.
